- 5 cups fresh spinach, chopped

- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1 large egg, beaten
- 1 tablespoon fresh dill, chopped (optional)

- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook the filling: Heat olive oil in a skillet, sauté onion, add garlic, then stir in spinach and season. Let cool slightly.
- Prepare the filling: Combine the spinach mixture with feta, mozzarella, beaten egg, and dill if using.
- Assemble the pastries: Roll out puff pastry, cut into pieces, fill with the mixture, fold, and seal edges with a fork.
- Bake: Brush pastries with egg wash, bake for 18–22 minutes until golden and puffed. Cool slightly before serving.
