  2. Mix wet ingredients: In a separate bowl, beat the eggs with granulated sugar, brown sugar, vegetable oil, and vanilla extract until the mixture is smooth and uniform.
  3. Combine ingredients: Gradually add the dry ingredients into the wet mixture, folding them together carefully. Then, fold in the grated carrots and chopped nuts if you are using them.
  4. Preheat air fryer: Preheat your air fryer to 320°F (160°C) for 3 to 5 minutes to ensure even cooking.
