- Prepare the batter: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg (if using), and salt until well combined.
- Mix wet ingredients: In a separate bowl, beat the eggs with granulated sugar, brown sugar, vegetable oil, and vanilla extract until the mixture is smooth and uniform.
- Combine ingredients: Gradually add the dry ingredients into the wet mixture, folding them together carefully. Then, fold in the grated carrots and chopped nuts if you are using them.
- Preheat air fryer: Preheat your air fryer to 320°F (160°C) for 3 to 5 minutes to ensure even cooking.
