Almond Flour Cookies:

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together almond flour, baking soda, and salt.
- Combine wet ingredients: In a separate bowl, mix melted coconut oil (or butter), maple syrup (or honey), and vanilla extract until smooth.
- Mix dough: Combine wet and dry ingredients, fold in chocolate chips or nuts if using, and stir until a soft dough forms.
- Shape cookies: Scoop tablespoon-sized portions of dough, roll into balls, place on baking sheet, and flatten slightly.
- Bake: Bake for 10-12 minutes until edges are lightly golden. Cool on sheet for 5 minutes, then transfer to wire rack to cool completely.
