Soup Base:
- 4 cups chicken broth
- 1 cup milk

- 2 cups diced cooked chicken (rotisserie or leftover)
- 1 cup frozen corn
- 1 cup frozen peas
- 1 ½ cups uncooked egg noodles
- ½ cup heavy cream (optional for extra richness)
- Chopped fresh parsley for garnish
Instructions
- Sauté Vegetables: In a large soup pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until tender. Add garlic, thyme, salt, and pepper, cook for 1 more minute.
- Add Broth and Ingredients: Pour in chicken broth and milk. Bring to a boil. Add chicken, corn, peas, and noodles. Simmer for 10–12 minutes until noodles are tender.
- Finish Soup: Stir in heavy cream, adjust seasoning, and simmer for 2–3 minutes. Garnish with parsley. Serve hot.
