Instructions
- Prepare the Milk Mixture: In a saucepan, heat the milk with the cinnamon stick and lemon peel until nearly boiling. Let steep for 15 minutes.
- Prepare the Egg Mixture: Whisk together egg yolks, sugar, and cornstarch until smooth.
- Combine Mixtures: Remove cinnamon and lemon peel from milk. Slowly pour milk into the egg mixture, whisking constantly.
- Cook the Custard: Return mixture to the saucepan and cook over low heat until thickened.
- Chill and Caramelize: Pour custard into ramekins, chill, sprinkle with sugar, and caramelize before serving.
