Ingredients
Scale
Apple Filling
- 4 medium apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1 teaspoon lemon juice
For Assembly
- 10–12 rice paper wrappers
- Cooking spray or melted butter, for brushing
- Powdered sugar, for dusting (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the rolls.
- Prepare Apple Filling: In a skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg if using, and lemon juice. Cook for 6 to 8 minutes, stirring occasionally until the apples are tender and caramelized. Remove from heat and let the mixture cool slightly.
- Soften Rice Paper: Fill a shallow dish with warm water and soak one rice paper wrapper at a time for 10 to 15 seconds until it becomes soft and pliable. Lay the softened wrapper flat on a clean surface.
- Fill and Roll: Spoon about 2 tablespoons of apple filling onto the lower third of the wrapper. Fold the sides inward, then roll tightly like a spring roll to enclose the filling. Repeat this process with the remaining wrappers and filling.
- Prepare for Baking: Place the rolls seam-side down on the lined baking sheet. Lightly brush each roll with melted butter or spray with cooking spray to help them crisp up.
- Bake Rolls: Bake in the preheated oven for 15 to 18 minutes, flipping the rolls halfway through so they crisp evenly until golden brown and crispy.
- Cool and Serve: Allow the rolls to cool slightly before serving. Optionally, dust with powdered sugar for a sweet finish and serve with caramel sauce or vanilla ice cream for an indulgent dessert twist.
Notes
- Serve with caramel sauce or vanilla ice cream to elevate as a dessert.
- The apple filling can be made ahead and stored in the refrigerator for quick assembly later.
- Be careful not to soak the rice paper too long or they may become too fragile to roll.
- Flipping the rolls halfway through baking ensures even crisping on all sides.
