Chicken Nuggets:

  • 1 pound boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a wire rack.
  2. Prepare coating: In a shallow bowl, whisk the eggs. In a separate bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat chicken: Dip each chicken piece into the egg mixture, then coat evenly in the breadcrumb mixture. Place on the baking sheet or rack.
  4. Bake: Lightly spray the tops with cooking spray. Bake for 18-20 minutes, flipping halfway through until golden and reach 165°F (74°C) internally.
