Baby Potatoes:
- 2 pounds baby potatoes, halved
Seasonings:
- 2 tablespoons olive oil

Whipped Feta:
- 6 oz block of feta cheese
- 1/4 cup milk or cream
- 1 tablespoon lemon juice
- 1 tablespoon olive oil (for blending)
- 2 tablespoons chopped fresh parsley
Optional Toppings:
- Chili flakes
- Sliced green onions
- Olives
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare the potatoes: Toss halved potatoes with olive oil, garlic powder, oregano, salt, and pepper. Roast on a baking sheet for 30–35 minutes.
- Make the whipped feta: Blend crumbled feta with milk or cream, lemon juice, and olive oil until smooth.
- Assemble: Spoon or drizzle the whipped feta over the roasted potatoes. Garnish with parsley and toppings.
- Serve: Serve the Baked Feta Potatoes warm and enjoy!
Notes
- You can use larger Yukon gold or red potatoes—just cut them into bite-sized pieces.
