Baby Potatoes:
- 2 lbs baby potatoes, halved
Seasoning:
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 1 block (6–8 oz) feta cheese
- 1/4 cup chopped fresh parsley
- juice of 1/2 lemon (optional)
- red pepper flakes (optional, for garnish)
Instructions
- Preheat the Oven: Preheat oven to 400°F (200°C).
- Prepare Potatoes: Toss halved baby potatoes with olive oil, oregano, garlic powder, salt, and pepper in a mixing bowl.
- Bake: Spread seasoned potatoes in a baking dish, nestle the feta in the center, and bake for 35-40 minutes until golden.
- Finish: Mash the softened feta, toss with potatoes, and finish with lemon juice, parsley, and red pepper flakes.
- Serve: Serve warm and enjoy!
Notes
- You can use crumbled feta if you don’t have a block—just stir it in after baking.
- Add cherry tomatoes or olives before baking for a Mediterranean twist.
