Additional:

  • 1 block (6–8 oz) feta cheese
  • 1/4 cup chopped fresh parsley
  • juice of 1/2 lemon (optional)
  • red pepper flakes (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C).
  2. Prepare Potatoes: Toss halved baby potatoes with olive oil, oregano, garlic powder, salt, and pepper in a mixing bowl.
  3. Bake: Spread seasoned potatoes in a baking dish, nestle the feta in the center, and bake for 35-40 minutes until golden.
  4. Finish: Mash the softened feta, toss with potatoes, and finish with lemon juice, parsley, and red pepper flakes.
