Egg Mixture
- 8 large eggs
- 1 cup whole milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Cheeses
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
Vegetables
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- Optional: 1/4 cup diced onions or bell peppers
Other
- 1 tablespoon olive oil (for greasing the baking dish)
Instructions
- Preheat the Oven. Preheat your oven to 375°F (190°C) and grease a 9×9-inch or similarly sized baking dish with olive oil to prevent sticking.
- Mix Eggs and Milk. In a large mixing bowl, whisk together the 8 large eggs and 1 cup of whole milk until the mixture is smooth and well combined.
- Add Cheese and Seasonings. Stir in the shredded cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper ensuring even distribution throughout the mixture.
- Incorporate Spinach and Optional Vegetables. Fold in the thawed and well-drained chopped spinach. If desired, add the diced onions or bell peppers for extra flavor and texture.
- Pour and Bake. Pour the entire mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30 to 35 minutes, or until the center is set and the top has turned a lovely golden color.
- Cool and Serve. Remove the casserole from the oven and let it cool slightly before cutting into slices. Serve warm for a satisfying breakfast or brunch.
Notes
- Fresh spinach can be substituted for frozen; just sauté and drain well before adding.
- Try swapping cheddar or Parmesan with mozzarella or feta cheese for different flavors.
- This casserole reheats well, making it ideal for meal prepping and quick breakfasts throughout the week.
