Scale
Vegetables
- 1 bunch fresh asparagus (trimmed)
- 1 cup cherry tomatoes (halved)
- 2 cloves garlic (minced)
Seasonings and Toppings
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh basil or parsley (chopped, optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Prepare Asparagus: Spread the trimmed asparagus in a single layer on the prepared baking sheet to ensure even roasting.
- Season Vegetables: Drizzle the asparagus with olive oil and sprinkle with salt and black pepper for balanced seasoning. Scatter the halved cherry tomatoes and minced garlic evenly over the asparagus.
- Roast: Place the baking sheet in the oven and roast for 15–18 minutes until the asparagus is tender but still slightly crisp, and the cherry tomatoes have blistered and softened.
- Add Balsamic and Toss: Remove the tray from the oven and immediately drizzle the balsamic vinegar over the vegetables. Toss gently to coat all the ingredients evenly with the tangy vinegar.
- Finish and Serve: Transfer the roasted asparagus and tomatoes to a serving platter. Sprinkle the freshly grated Parmesan cheese over the top and garnish with chopped fresh basil or parsley, if desired. Serve warm for best flavor.
Notes
- For deeper flavor, use aged balsamic vinegar or finish with a drizzle of balsamic glaze instead of plain vinegar.
- This dish pairs excellently with grilled chicken, steak, or pasta for a complete meal.
- Asparagus can be substituted with other tender vegetables like green beans or broccolini if preferred.
