Instructions
- Preheat Griddle: Preheat your Blackstone griddle or a large skillet over medium-high heat to ensure an even cooking surface for the beef mixture and quesadillas.
- Cook Ground Beef: Add the ground beef to the griddle and season with salt, black pepper, garlic powder, and onion powder. Cook, stirring and breaking apart the meat, until it is fully browned and cooked through.
- Mix in Flavorings: Stir in the ketchup, mustard, diced onions, and diced pickles into the cooked ground beef. Continue cooking for an additional 2–3 minutes to let the flavors meld, then remove the mixture from heat.
- Prepare Griddle and Tortilla: Wipe down the griddle if necessary and reduce heat to medium. Lightly butter or oil the griddle surface to prevent sticking. Place one large flour tortilla flat on the griddle.
- Assemble Quesadilla: Sprinkle 1/4 of the shredded cheddar cheese evenly over half of the tortilla. Add a generous scoop of the ground beef mixture on top of the cheese, along with any optional toppings such as shredded lettuce or tomato slices. Layer more cheese over the filling, then fold the tortilla in half to enclose the ingredients.
- Grill Quesadilla: Cook the folded quesadilla on the griddle until golden brown and crispy, about 2–3 minutes per side. Press gently with a spatula to help it cook evenly and melt the cheese inside.
- Repeat and Serve: Repeat the layering and grilling process with the remaining tortillas and filling. Slice each quesadilla into wedges and serve warm with extra ketchup, mustard, or your favorite burger sauce for dipping.
