For the cake:
- 1/2 cup unsalted butter (softened)
- 1 cup granulated sugar (plus 1 tablespoon for topping)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (divided)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 2 cups fresh or frozen blueberries (if frozen, do not thaw)
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch baking pan.
- Mix wet ingredients: In a large mixing bowl, cream together the butter and 1 cup of sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
- Combine dry ingredients: In a separate bowl, whisk together 1 3/4 cups of the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the flour mixture.
- Add blueberries: Toss the blueberries with the remaining 1/4 cup flour, then gently fold them into the batter. Spread the batter evenly into the prepared pan and sprinkle the top with the remaining tablespoon of sugar.
- Bake: Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden. Let cool slightly before serving.
