Instructions
- Prepare the Blueberry Swirl: In a small saucepan over medium heat, combine the blueberries and lemon juice. Cook for 3–5 minutes, stirring occasionally, until the berries break down. Lightly mash the berries and add water if needed to thin. Let cool.
- Mix the Yogurt: In a bowl, combine Greek yogurt, honey, and vanilla extract until smooth.
- Assemble the Bites: Fill each mold cavity with yogurt, top with blueberry mixture, and swirl gently with a toothpick. Repeat until all mixtures are used.
- Freeze: Freeze for at least 2 hours until set. Unmold and store in a container in the freezer.
