  • Vegetables:

  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • Liquid and Seasonings:

  • 1 cup red wine
  • 2 cups beef or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Preheat the Oven: Preheat the oven to 325°F.
  2. Season and Sear: Season lamb shanks with salt and pepper. Sear in a Dutch oven until browned; set aside.
  3. Sauté Vegetables: Sauté onion, carrots, and celery. Add garlic and tomato paste.
  4. Deglaze and Simmer: Deglaze with red wine. Add broth, tomatoes, herbs. Return lamb to pot.
  5. Braise: Cover and braise in the oven for 2.5 to 3 hours until tender.
  6. Thicken Sauce: Remove lamb, simmer sauce to thicken.
  7. Serve: Serve lamb shanks with sauce spooned over the top.
