Ingredients
Scale
Chicken and Sauce
- 1 tablespoon olive oil
- 1 lb chicken breast
- Salt and pepper to taste
- 1/2 cup buffalo sauce
- 1/2 cup ranch dressing
Nachos
- 1 bag corn tortilla chips (10–15 ounces)
- 1 cup shredded colby jack cheese
- 2–3 green onions, sliced
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with foil if desired for easier cleanup.
- Cook Chicken: Heat olive oil in a large sauté pan over medium heat. Season chicken breast with salt and pepper, then add it to the pan. Cook for about 10-12 minutes until the chicken is fully cooked and no longer pink inside.
- Shred Chicken: Remove the cooked chicken from the pan and shred it using two forks or your preferred method.
- Prepare Chicken with Sauces: Return the shredded chicken to the same pan. Add buffalo sauce and ranch dressing, stirring well to coat the chicken evenly. Let it simmer for 1-2 minutes to blend the flavors.
- Assemble Nachos: Spread the corn tortilla chips evenly on the prepared baking sheet. Top with the buffalo ranch chicken mixture, then sprinkle shredded colby jack cheese evenly on top.
- Bake: Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese has completely melted and is bubbly.
- Serve: Remove the nachos from the oven, sprinkle with sliced green onions, and serve warm immediately for the best flavor and texture.
Notes
- Adjust the amount of buffalo sauce for desired spiciness.
- Use cooked rotisserie chicken as a shortcut if preferred.
- For extra flavor, add jalapeños or diced tomatoes on top before baking.
- Serve with extra ranch or blue cheese dressing on the side.
- Leftover nachos can be refrigerated and reheated in the oven to retain crispness.
