- 1 bell pepper, diced

- 2 cloves garlic, minced
- 1/2 cup diced carrots
- 2 medium potatoes, peeled and diced
- 1 cup corn kernels, fresh or frozen
- 1/2 cup chopped green onions
Seasonings:
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon dried thyme
- Salt and black pepper to taste
- 1 tablespoon all-purpose flour
Additional:
- 3 cups low-sodium chicken broth
- 1 cup heavy cream
- Chopped fresh parsley for garnish
Instructions
- Sauté Vegetables: In a large pot, heat olive oil and butter. Sauté onion, bell pepper, celery, and carrots until softened.
- Add Seasonings: Stir in garlic, Cajun seasoning, smoked paprika, thyme, salt, and pepper. Sprinkle in flour and cook.
- Cook Chowder: Pour in chicken broth, add potatoes, and simmer until tender. Stir in corn and cream, cook for a few minutes.
- Add Shrimp: Add shrimp and cook until pink and opaque. Stir in green onions and adjust seasoning.
- Serve: Garnish with parsley and serve hot.
