For the Deviled Eggs:
- 6 large eggs, hard-boiled and peeled
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/2 teaspoon Cajun seasoning (plus more for garnish)
- Salt and pepper to taste
For the Shrimp Topping:
- 12 small cooked shrimp (or 6 medium, halved)
- 1 teaspoon olive oil
- Chopped chives or parsley for garnish
Instructions
- Slice and Prep Eggs: Slice hard-boiled eggs in half lengthwise, remove yolks, and mash in a bowl. Add mayonnaise, Dijon mustard, lemon juice, and Cajun seasoning. Mix until smooth.
- Season and Cook Shrimp: In a skillet, sauté shrimp with Cajun seasoning in olive oil until just warmed. Let cool.
- Fill Eggs: Spoon or pipe yolk mixture back into egg halves. Top each with a shrimp.
- Garnish and Serve: Sprinkle with more Cajun seasoning, chopped chives or parsley. Serve chilled.

- For extra heat, add hot sauce or cayenne to the filling.
- Pre-cooked cocktail shrimp can be used for quicker preparation.
