Lemon Cream Sauce & Garnish
- ¼ cup sour cream or Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare Sweet Potatoes: Preheat the oven to 400°F (200°C). Toss the peeled and sliced sweet potato rounds with olive oil, paprika, garlic powder, onion powder, dried thyme, cayenne pepper, salt, and black pepper until evenly coated.
- Roast Sweet Potatoes: Arrange the seasoned sweet potato slices on a parchment-lined baking sheet in a single layer. Roast in the oven for 20–25 minutes, flipping halfway through, until they are tender and lightly browned.
- Season Shrimp: While the sweet potatoes roast, pat the shrimp dry and toss them with Cajun seasoning to coat evenly.
- Cook Shrimp: Heat butter in a skillet over medium heat. Add the shrimp and sauté for 2–3 minutes on each side, until shrimp are opaque and have a slight char.
- Make Lemon Cream Sauce: In a small bowl, combine sour cream (or Greek yogurt) with lemon juice and mix thoroughly to create the lemon cream sauce.
- Assemble Bites: Once sweet potato rounds are cooked, top each round with a dollop of lemon cream sauce, one cooked shrimp, and a sprinkle of chopped fresh parsley.
