Lemon Cream Sauce & Garnish

  • ¼ cup sour cream or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Prepare Sweet Potatoes: Preheat the oven to 400°F (200°C). Toss the peeled and sliced sweet potato rounds with olive oil, paprika, garlic powder, onion powder, dried thyme, cayenne pepper, salt, and black pepper until evenly coated.
  2. Roast Sweet Potatoes: Arrange the seasoned sweet potato slices on a parchment-lined baking sheet in a single layer. Roast in the oven for 20–25 minutes, flipping halfway through, until they are tender and lightly browned.
  3. Season Shrimp: While the sweet potatoes roast, pat the shrimp dry and toss them with Cajun seasoning to coat evenly.
  4. Cook Shrimp: Heat butter in a skillet over medium heat. Add the shrimp and sauté for 2–3 minutes on each side, until shrimp are opaque and have a slight char.
  5. Make Lemon Cream Sauce: In a small bowl, combine sour cream (or Greek yogurt) with lemon juice and mix thoroughly to create the lemon cream sauce.
