Instructions
- Preheat the oven: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In a large bowl, whisk the eggs, oil, brown sugar, granulated sugar, and vanilla extract until smooth. Stir in the grated carrot and apple.
- Mix the batter: Add the dry ingredients to the wet mixture and stir until just combined. Fold in the chopped nuts if using.
- Bake: Pour the batter into the prepared loaf pan, smooth the top, and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
