Custard

  • 4 large eggs
  • 1 cup whole milk

  • ⅛ teaspoon ground nutmeg

Instructions

  1. Prepare the Oven and Pie Crust: Preheat the oven to 375°F (190°C). Roll out the pie crust into a 9-inch pie dish and set it aside to be filled later.
  2. Caramelize the Onions: Heat the olive oil in a skillet over medium heat. Add the thinly sliced onions and cook slowly for 15 to 20 minutes, stirring occasionally until they become golden and caramelized. Remove from heat and allow to cool slightly.
  3. Make the Egg Mixture: In a mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, black pepper, dried thyme, and ground nutmeg until fully combined and smooth.
  4. Assemble the Quiche: Layer the shredded carrots evenly over the prepared pie crust, then spread the caramelized onions over the carrots. Sprinkle the shredded sharp cheddar cheese on top of the vegetables. Pour the egg mixture evenly over all the fillings.
  5. Bake the Quiche: Place the quiche in the preheated oven and bake for 35 to 45 minutes, or until the center is just set and the top turns golden brown.
