For the Beef Mixture:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade mix)
- 1 can (10 oz) red enchilada sauce
- 1 can (10 oz) diced tomatoes with green chilies
For the Tortellini:
- 1 package (20 oz) refrigerated cheese tortellini
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh cilantro
Optional Toppings:

- sliced jalapeños
- extra cilantro
Instructions
- Cook the Beef Mixture: In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is softened, about 6–7 minutes. Drain excess grease.
- Add Flavors: Add garlic and cook for 30 seconds until fragrant. Stir in taco seasoning, enchilada sauce, and diced tomatoes with green chilies. Simmer for 5 minutes.
- Cook the Tortellini: Cook tortellini according to package directions; drain well.
- Combine and Melt Cheese: Add cooked tortellini to the beef mixture and stir to combine. Sprinkle both cheeses over the top, cover, and cook on low for 2–3 minutes until cheese melts.
- Garnish and Serve: Garnish with fresh cilantro and serve hot with desired toppings.
Notes
- For a creamier dish, stir ½ cup sour cream into the beef mixture before adding the tortellini.
- You can also bake the mixture in a casserole dish topped with cheese at 375°F for 15 minutes for a bubbly, golden top.
