Instructions
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked, about 6–8 minutes. Drain excess grease if necessary. Stir in garlic powder, chili powder, cumin, paprika, salt, and pepper. Cook for another minute. Remove from heat.
- Assemble the Quesadillas: Lay a tortilla flat, sprinkle a mix of cheddar and Monterey Jack cheese over half. Add a scoop of beef mixture on top, then more cheese. Fold in half.
- Cook the Quesadillas: Heat a skillet, add oil or butter. Cook the quesadilla for 2–3 minutes per side until golden and cheese melts. Repeat with remaining tortillas.
- Serve: Slice into wedges and serve hot with desired toppings.
