Ground Beef Mixture:
- 1 lb ground beef
- 1 tablespoon olive oil (if needed)
- 1 small yellow onion, diced
- 2 garlic cloves, minced
Potato Mixture:
- 1 ½ lbs baby potatoes, halved or quartered
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- Salt and black pepper to taste
- 1 ½ cups beef broth
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons sour cream (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Cook Ground Beef: In a large skillet or Dutch oven, cook the ground beef until browned. Drain excess fat if needed.
- Add Onions and Potatoes: Add onion and garlic, sauté until softened. Stir in potatoes, paprika, oregano, salt, and pepper.
- Cook with Broth: Pour in beef broth, simmer covered for 15–20 minutes until potatoes are tender. Uncover and cook to reduce liquid.
- Add Cheeses: Sprinkle cheddar and mozzarella over the top, cover until melted. Remove from heat.
- Finish and Serve: Add sour cream, garnish with parsley, and serve hot.

- You can swap baby potatoes with russet or Yukon Gold potatoes.
