Ground Beef Mixture:

  • 1 lb ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced

Potato Mixture:

  • 1 ½ lbs baby potatoes, halved or quartered
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 ½ cups beef broth
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons sour cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook Ground Beef: In a large skillet or Dutch oven, cook the ground beef until browned. Drain excess fat if needed.
  2. Add Onions and Potatoes: Add onion and garlic, sauté until softened. Stir in potatoes, paprika, oregano, salt, and pepper.
  3. Cook with Broth: Pour in beef broth, simmer covered for 15–20 minutes until potatoes are tender. Uncover and cook to reduce liquid.
  4. Add Cheeses: Sprinkle cheddar and mozzarella over the top, cover until melted. Remove from heat.
  5. Finish and Serve: Add sour cream, garnish with parsley, and serve hot.
