Chicken and Potatoes

  • 1 lb chicken breast or strips, thawed and/or uncooked
  • 4 medium potatoes
  • 1 large onion, diced

Cheese and Cream Mixture

  • 2 cups cottage cheese
  • 1 cup sour cream
  • 1/2 cup parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp cayenne
  • 1 tsp salt
  • 1 tsp black pepper

  • 1 cup cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a 13×9-inch or 3-quart baking dish by coating it with cooking spray or butter to prevent sticking.
  2. Prepare Potatoes: Peel the potatoes and cut them into cubes. Boil the cubed potatoes in heavily salted water for about 10 minutes until tender but still firm. Drain and set them aside to cool slightly.
  3. Prepare Chicken: Cut the chicken breasts into 1-inch pieces and set them aside for mixing.
  4. Mix Cheese Sauce: In a large bowl, combine the diced onion, cottage cheese, sour cream, parmesan cheese, chopped fresh parsley, cayenne pepper, salt, and black pepper. Stir thoroughly until all ingredients are well blended.
  5. Combine Ingredients: Add the cubed potatoes and chicken pieces into the cheese mixture. Gently fold everything together making sure the chicken and potatoes are evenly coated.
  6. Assemble in Baking Dish: Pour the combined mixture into the prepared baking dish, spreading it evenly.
  7. Add Cheese Topping: Sprinkle the shredded cheddar cheese evenly over the top of the mixture in the baking dish.
  8. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese topping is melted, bubbly, and golden brown. Check to ensure the chicken is fully cooked through before serving.
