- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder

- 1 1/2 cups sweetened shredded coconut
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking pan or line it with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together melted butter and brown sugar until smooth. Add the eggs and vanilla extract, mixing until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture.
- Add Coconut: Fold in the shredded coconut until evenly incorporated.
- Bake: Spread the batter evenly in the prepared pan. Bake for 25–30 minutes until the top is golden and a toothpick inserted in the center comes out mostly clean.
- Cool and Serve: Allow to cool completely in the pan before cutting into bars.
