Ingredients
Scale
Meatloaf:
- 1 ½ pounds ground chicken
- ½ cup plain breadcrumbs
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried thyme
- 4 ounces sliced ham
- 4 ounces Swiss cheese (sliced or shredded)
- 2 tablespoons milk
Topping:
- 2 tablespoons Dijon mustard
- ¼ cup grated Parmesan cheese
- ¼ cup plain breadcrumbs
- 1 tablespoon melted butter
Instructions
- Preheat and prepare pan: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan to prevent sticking.
- Mix meatloaf ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, garlic powder, onion powder, Dijon mustard, salt, pepper, thyme, and milk. Mix gently until the ingredients are combined, being careful not to overwork the meat which could result in a dense loaf.
- Shape and fill the meatloaf: On a sheet of parchment paper or plastic wrap, flatten the chicken mixture into a rectangle about ½ inch thick. Evenly layer the sliced ham and Swiss cheese over the meat, leaving a small border around the edges. Carefully roll the mixture jelly-roll style to enclose the filling, using the parchment to help form a tight loaf. Pinch the edges and ends to seal completely. Place the loaf seam-side down on the prepared baking sheet or in the loaf pan.
- Prepare the topping: In a small bowl, mix together Dijon mustard, Parmesan cheese, breadcrumbs, and melted butter. Spread or brush this mixture evenly over the top of the shaped meatloaf.
- Bake the loaf: Bake the meatloaf in the preheated oven for 45 to 55 minutes, or until the internal temperature reaches 165°F (74°C), ensuring it is fully cooked through. Once done, let it rest for 5 to 10 minutes to firm up before slicing and serving.
Notes
- Substitute Swiss cheese with mozzarella or provolone for a different cheese flavor.
- Add chopped fresh herbs like parsley or chives to the meat mixture for extra freshness and aroma.
- This meatloaf pairs beautifully with roasted vegetables or creamy mashed potatoes for a complete meal.
- For a gluten-free version, use gluten-free breadcrumbs and ensure the ham is gluten-free.
