Instructions

  2. Add Garlic: Stir in the minced garlic and cook for an additional minute, allowing the garlic to release its aroma without burning.
  3. Add Broth and Seasonings: Pour in the low-sodium chicken broth. Add the shredded cooked chicken, egg noodles, dried thyme, dried parsley, black pepper, salt, and the bay leaf. Stir everything to combine.
  4. Simmer Soup: Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cook uncovered for 10–12 minutes or until the egg noodles are tender and cooked through.
  5. Finish and Garnish: Remove the bay leaf from the soup. If desired, stir in the juice of half a lemon to add a bright, fresh flavor. Taste and adjust seasoning if needed. Serve the soup hot, garnished with chopped fresh parsley.
