For the Chicken Scampi:

Instructions

  1. Prepare the Garlic Parmesan Rice: In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in the rice and toast for 1–2 minutes, stirring constantly. Pour in the chicken broth and add salt, then bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15–18 minutes until the rice is tender and the liquid is absorbed. Remove from heat, fluff the rice with a fork, then stir in the Parmesan cheese. Cover and keep warm.
  2. Cook the Chicken: While the rice cooks, heat olive oil and butter in a large skillet over medium-high heat. Season the chicken strips with salt and black pepper. Add the chicken to the skillet and cook for 4–5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Scampi Sauce: In the same skillet, reduce the heat to medium and add the minced garlic and crushed red pepper flakes, if using. Sauté for 30 seconds until fragrant. Pour in the white wine or chicken broth and simmer for 2–3 minutes to reduce slightly.
