- juice of 1 lemon
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Garlic Parmesan Rice:
- 1 cup long grain white rice
- 2 cups low-sodium chicken broth
- 1 tablespoon butter
- 2 cloves garlic (minced)
- 1/3 cup grated Parmesan cheese
- salt and pepper to taste
Instructions
- Prepare the Chicken Scampi: In a skillet, sauté chicken in olive oil and 1 tbsp butter. Add garlic, red pepper flakes, wine, lemon juice, and simmer.
- Make the Garlic Parmesan Rice: Sauté garlic in butter, add rice, broth, simmer until cooked. Stir in Parmesan, salt, and pepper.
- Serve: Plate the chicken scampi over the garlic Parmesan rice. Garnish with parsley and lemon wedges.
