Marinade:
- 1 ½ pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, red wine vinegar, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat.
- Marinate: Cover and refrigerate for at least 1 hour, preferably 4 hours.
- Preheat Grill: Preheat grill or grill pan over medium-high heat.
- Skewer Chicken: Thread marinated chicken onto skewers.
- Grill: Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through with charred edges.
- Serve: Remove from heat and serve warm with pita bread, tzatziki sauce, and fresh salad.
Notes
- If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
- This recipe can also be cooked under a broiler or in a stovetop grill pan.
