Description

Marinade:

  • 1 ½ pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, red wine vinegar, oregano, thyme, salt, and pepper. Add chicken cubes and toss to coat.
  2. Marinate: Cover and refrigerate for at least 1 hour, preferably 4 hours.
  3. Preheat Grill: Preheat grill or grill pan over medium-high heat.
  4. Skewer Chicken: Thread marinated chicken onto skewers.
  5. Grill: Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through with charred edges.

Notes

  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
