Filling and Chocolate Coating:

  • 1/2 cup seedless raspberry jam
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  4. Bake: Scoop tablespoon-sized portions of dough onto the baking sheets, spacing about 2 inches apart. Flatten slightly with the back of a spoon. Bake for 8–10 minutes, then let cool on the pan for 5 minutes before transferring to a wire rack.
  5. Assemble: Spread 1 teaspoon of raspberry jam on the bottom of half the cookies. Top with the remaining cookies to create sandwiches.
  6. Chocolate Coating: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until melted and smooth. Dip half of each sandwich cookie into the chocolate, letting excess drip off. Place on parchment paper and let the chocolate set before serving.
