For the Toffee:
- 40 saltine crackers
- 1 cup unsalted butter
- 1 cup brown sugar (packed)
- 1 1/2 tsp ground cinnamon (divided)
For Topping:
- 1/4 cup granulated sugar
- 2 cups white chocolate chips
Instructions
- Preheat oven: Preheat oven to 400°F. Line a 10×15-inch rimmed baking sheet with foil and lightly spray with nonstick cooking spray.
- Prepare crackers: Arrange saltine crackers in a single layer on the prepared baking sheet.
- Make toffee: In a saucepan, melt butter and brown sugar until boiling. Pour over crackers and bake for 5 minutes.
- Add toppings: Sprinkle white chocolate chips over the hot toffee, wait to soften, then spread evenly. Mix granulated sugar with 1 tsp cinnamon and sprinkle over the chocolate. Finish with remaining 1/2 tsp cinnamon.
- Cool and serve: Let the toffee cool at room temperature, then break into pieces.
Notes
- For a variation, try using semi-sweet or milk chocolate instead of white chocolate.
