Instructions

- Cooking: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup batter for each pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook for another 1–2 minutes until golden brown and cooked through.

Wet Ingredients: In another bowl, whisk the buttermilk, egg, melted butter, and vanilla until combined. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix (a few lumps are fine).
