Broth:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 shallots, minced
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup dry white wine
- 1 can (28 oz) crushed tomatoes
- 1 cup seafood or fish stock
- 1/2 cup clam juice
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Seafood:
- 1 pound littleneck clams, scrubbed
- 1 pound mussels, cleaned and debearded
- 1/2 pound large shrimp, peeled and deveined
- 1/2 pound sea scallops
- 1/2 pound firm white fish (cod or halibut), cut into chunks
For Serving:
- 2 tablespoons chopped fresh parsley
- Crusty bread
Instructions
- Prepare the Broth: Heat olive oil in a large pot over medium heat. Add onion, shallots, and garlic. Cook until softened, about 5 minutes. Stir in red pepper flakes and cook for 1 minute. Pour in white wine, bring to a simmer. Add crushed tomatoes, seafood stock, clam juice, oregano, thyme, salt, and pepper. Simmer uncovered for 20 minutes.
- Cook the Seafood: Add clams and mussels, cover and cook for 5 minutes until they start to open. Add shrimp, scallops, and fish. Gently stir, cover, and cook for 5–7 minutes until seafood is cooked and shellfish have opened.
- Finish and Serve: Sprinkle with parsley and serve hot with crusty bread for dipping.
