Description

Cowboy Queso is a hearty and flavorful Tex-Mex cheese dip that’s perfect for parties or game day gatherings. This spicy queso dip features a blend of ground beef or sausage, creamy cheeses, and zesty seasonings, creating a rich and satisfying appetizer that pairs well with tortilla chips or veggies.

Ingredients

Ground Beef or Spicy Sausage:

1/2 pound

Olive Oil (if needed):

1 tablespoon

Diced Tomatoes with Green Chiles (undrained):

1 (10 oz) can

Evaporated Milk:

1 (12 oz) can

Cream Cheese (cubed):

1 (8 oz) block

Shredded Sharp Cheddar Cheese:

2 cups

Shredded Monterey Jack Cheese:

1/2 cup

Garlic Powder:

1/4 teaspoon

Onion Powder:

1/4 teaspoon

Smoked Paprika:

1/4 teaspoon

Black Pepper:

1/4 teaspoon

Cilantro (optional):

1/4 cup chopped

Jalapeños and Green Onions for Garnish

Instructions

  1. Cook the Ground Beef or Sausage: In a large skillet or saucepan, cook the ground beef or sausage over medium heat until browned and fully cooked. Drain excess grease if needed.
  2. Prepare the Cheese Mixture: Add the diced tomatoes with green chiles and evaporated milk. Stir in cream cheese and cook over medium-low heat until melted and smooth, stirring frequently.
  3. Add the Cheeses: Gradually add in the shredded cheddar and Monterey Jack cheeses, stirring until melted and creamy. Season with garlic powder, onion powder, smoked paprika, and black pepper. Reduce heat to low and keep warm, stirring occasionally.
  4. Garnish and Serve: Garnish with chopped cilantro, sliced jalapeños, and green onions if desired. Serve warm with tortilla chips, pretzel bites, or fresh veggies.

Notes

  • For extra kick, stir in a few dashes of hot sauce or use pepper jack cheese.
  • You can also keep it warm in a slow cooker on the ‘warm’ setting for parties.
