Description

This Crack Chicken Soup is a creamy, flavorful, and comforting dish made with tender shredded chicken, ranch seasoning, cream cheese, cheddar cheese, and fresh green onions. It’s easy to prepare on the stovetop and perfect for a hearty meal any day of the week.

Ingredients

Scale

Soup Base

  • 1 pound boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth

Seasoning & Dairy

  • 1 packet ranch dressing mix (approximately 1 ounce)
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese

Vegetables & Garnish

  • 1 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Cook the chicken: In a large pot, combine the boneless, skinless chicken breasts and 4 cups of low-sodium chicken broth. Bring the mixture to a boil over medium heat.
  2. Simmer the chicken: Reduce the heat to low and let the chicken simmer gently for about 20 minutes, or until it is cooked through and no longer pink in the center.
  3. Shred the chicken: Remove the chicken breasts from the pot carefully, then shred the meat using two forks. Return the shredded chicken to the pot with the broth.
  4. Add ranch mix and cream cheese: Stir in a packet of ranch dressing mix and 8 ounces of softened cream cheese into the pot. Mix well until the cream cheese is fully melted and incorporated.
  5. Simmer to blend flavors: Let the soup simmer for an additional 10 minutes, stirring occasionally to keep the cream cheese from sticking and ensuring all ingredients are well combined.
  6. Add cheese and green onions: Finally, stir in 1 cup of shredded cheddar cheese and 1 cup of chopped green onions. Continue to stir until the cheddar cheese has melted evenly into the soup.
  7. Season and serve: Taste the soup and add salt and pepper as needed. Serve hot for a deliciously creamy and savory experience.

Notes

  • Use low-sodium chicken broth to control the salt content of the soup.
  • You can substitute the ranch dressing mix with homemade ranch seasoning if preferred.
  • For a thicker soup, use less chicken broth or add more cream cheese.
  • The soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
  • Adding cooked, crumbled bacon on top makes a great garnish and adds extra flavor.
