Ingredients
Scale
Soup Base
- 1 pound boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
Seasoning & Dairy
- 1 packet ranch dressing mix (approximately 1 ounce)
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
Vegetables & Garnish
- 1 cup chopped green onions
- Salt and pepper to taste
Instructions
- Cook the chicken: In a large pot, combine the boneless, skinless chicken breasts and 4 cups of low-sodium chicken broth. Bring the mixture to a boil over medium heat.
- Simmer the chicken: Reduce the heat to low and let the chicken simmer gently for about 20 minutes, or until it is cooked through and no longer pink in the center.
- Shred the chicken: Remove the chicken breasts from the pot carefully, then shred the meat using two forks. Return the shredded chicken to the pot with the broth.
- Add ranch mix and cream cheese: Stir in a packet of ranch dressing mix and 8 ounces of softened cream cheese into the pot. Mix well until the cream cheese is fully melted and incorporated.
- Simmer to blend flavors: Let the soup simmer for an additional 10 minutes, stirring occasionally to keep the cream cheese from sticking and ensuring all ingredients are well combined.
- Add cheese and green onions: Finally, stir in 1 cup of shredded cheddar cheese and 1 cup of chopped green onions. Continue to stir until the cheddar cheese has melted evenly into the soup.
- Season and serve: Taste the soup and add salt and pepper as needed. Serve hot for a deliciously creamy and savory experience.
Notes
- Use low-sodium chicken broth to control the salt content of the soup.
- You can substitute the ranch dressing mix with homemade ranch seasoning if preferred.
- For a thicker soup, use less chicken broth or add more cream cheese.
- The soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
- Adding cooked, crumbled bacon on top makes a great garnish and adds extra flavor.
