  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 1 green bell pepper (diced)
  • 2 cloves garlic (minced)
  • 1 pound boneless skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 (15-ounce) cans white beans (drained and rinsed)
  • 1 (4-ounce) can diced green chiles
  • 2 cups chicken broth
  • 4 ounces cream cheese (softened and cubed)
  • ½ cup heavy cream
  • juice of ½ lime
  • chopped cilantro or green onions (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and sauté for 4–5 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds.
  3. Add chicken pieces to the pot and season with Cajun seasoning, cumin, smoked paprika, salt, and pepper. Cook for 5–7 minutes until the chicken is cooked through.
  4. Stir in the white beans, green chiles, and chicken broth. Bring to a simmer and cook for 10–15 minutes.
  5. Reduce heat to low and stir in cream cheese until fully melted and combined.
  6. Stir in the heavy cream and lime juice, and simmer for 2–3 more minutes.
  7. Adjust seasoning if needed and serve hot garnished with cilantro or green onions.

Notes

  • For extra heat, add a pinch of cayenne or a diced jalapeño with the onions.
  • This chili thickens as it sits—add extra broth when reheating if needed.
