- 1 tablespoon all-purpose flour
- 1 cup heavy cream

- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C). Toss baby potatoes with olive oil, salt, and pepper, then spread them on a baking sheet. Roast for 25–30 minutes, or until golden and fork-tender.
- Prepare the garlic sauce: In a medium skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1–2 minutes until fragrant. Whisk in the flour and cook for 1 minute to form a roux.
- Cook the sauce: Gradually whisk in the heavy cream until smooth. Stir in Parmesan cheese and thyme, and cook for 2–3 minutes until the sauce thickens. Season with additional salt and pepper to taste.
- Combine: Toss the roasted potatoes in the warm garlic cream sauce or pour the sauce over the potatoes in a serving dish. Garnish with chopped parsley if desired and serve immediately.
