Ingredients

Scale

For the Meatballs:

  • 1 lb ground chicken
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

For the Mushroom Cream Sauce:

  • 2 tablespoons butter
  • 8 oz cremini or button mushrooms, finely chopped
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Meatballs: In a bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic, onion powder, salt, and pepper until combined. Form into 1-inch meatballs.
  2. Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches until golden and cooked through, about 8–10 minutes. Transfer to a plate.
  3. Make the Mushroom Cream Sauce: In the same skillet, melt butter and sauté mushrooms and onion until soft. Add garlic and cook briefly. Sprinkle in flour and cook. Whisk in chicken broth and simmer. Stir in heavy cream, thyme, salt, and pepper. Return meatballs to the skillet and simmer to heat through.
  4. Serve: Garnish with parsley and serve over your choice of side dish.

Notes

  • Serve over mashed potatoes, pasta, or rice for a comforting meal.
  • For a lighter option, use half-and-half instead of heavy cream.
  • You can also bake the meatballs at 400°F for 15–18 minutes instead of pan-frying.
