Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pistachio pudding mix.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Add Mix-Ins: Fold in the white chocolate chips and chopped pistachios.
  7. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 9–11 minutes, or until the edges are lightly golden.
