Dry Ingredients:
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
Wet Ingredients:
- 2 large eggs
- 1/4 cup milk
Additional Ingredients:
- 2 cups fresh or frozen corn kernels (thawed if frozen)
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh parsley (optional)
- vegetable oil for frying
Instructions
- Prepare the Batter: In a large bowl, whisk together the flour, cornmeal, baking powder, salt, pepper, and smoked paprika. In a separate bowl, beat the eggs and milk together. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Combine Ingredients: Fold in the corn, shredded cheddar, green onions, and parsley if using.
- Fry the Fritters: Heat vegetable oil in a skillet, drop the batter by tablespoons into the hot oil, flatten slightly, and fry for 2–3 minutes per side until golden brown and crispy.
- Drain and Serve: Transfer the fritters to a paper towel-lined plate to drain excess oil. Repeat with remaining batter and serve warm with desired dips.
Notes
- You can use canned corn, just be sure to drain it well.
- Add chopped jalapeños or crumbled bacon for an extra kick.
