Description

This easy and flavorful roasted diced potatoes with chicken recipe combines tender, juicy chicken pieces with perfectly roasted, crispy potatoes. Instructions

  1. Preheat and prepare potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced potatoes with 1 tablespoon of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated. Spread the potatoes in a single layer on a baking sheet and roast for 20 minutes.
  2. Season the chicken: While the potatoes roast, in another bowl, toss the diced chicken pieces with the remaining 1 tablespoon olive oil, remaining garlic powder, smoked paprika, onion powder, and dried thyme, ensuring the chicken is evenly seasoned.
  3. Add chicken and continue roasting: After the potatoes have roasted 20 minutes, remove the baking sheet and gently stir the potatoes to turn them. Place the seasoned chicken pieces evenly on top of the potatoes. Return the pan to the oven and roast for an additional 20 to 25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
  4. Add cheese (optional): If using cheddar cheese, sprinkle it over the chicken and potatoes during the last 5 minutes of baking. Return to the oven just until the cheese is melted and bubbly.
  5. Garnish and serve: Remove from the oven and garnish with chopped fresh parsley or green onions. Serve immediately while hot.

Notes

  • You can add diced bell peppers or broccoli with the chicken during the second half of baking for a more complete one-pan meal.
  • For extra crispiness, broil the dish for 2–3 minutes at the end of cooking, watching carefully to avoid burning.
