For the Taquitos:
- 1 (15-ounce) can black beans, drained and rinsed
- 1/2 cup shredded cheddar or Mexican blend cheese
- 1/4 cup salsa
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 8 small corn tortillas

Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare Filling: In a medium bowl, mash the black beans with a fork or potato masher. Add cheese, salsa, cumin, garlic powder, chili powder, and salt. Mix well.
- Assemble Taquitos: Soften tortillas in the microwave. Spoon filling down the center of each tortilla and roll tightly. Place seam-side down on the baking sheet.
- Bake: Lightly spray the taquitos with olive oil. Bake for 15–18 minutes until golden and crisp.
- Serve: Enjoy warm with guacamole, sour cream, or extra salsa.

- To make in an air fryer, cook at 400°F (200°C) for 8–10 minutes.
- You can freeze unbaked taquitos for quick snacks—add 3–5 minutes to the cook time when baking from frozen.
