  • 3 cups chicken or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme

Cheese Sauce:

  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Garnish:

  • Chopped green onions for garnish (optional)

Instructions

  1. Prepare Ground Beef Mixture: In a large pot over medium heat, cook the ground beef until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess grease if necessary. Add the onion and garlic, cooking for 2 minutes until softened.
  2. Cook Soup Base: Stir in the potatoes, carrots, celery, broth, diced tomatoes, salt, pepper, paprika, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until vegetables are tender.
  3. Make Cheese Sauce: In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk and cook until thickened, about 2–3 minutes.
  4. Combine and Serve: Stir the milk mixture into the soup, then add the cheddar cheese, stirring until melted and smooth. Adjust seasoning to taste and serve hot, garnished with green onions if desired.

  • For a creamier soup, replace some of the broth with half-and-half.
