Chicken and Seasonings:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Rice Mixture:
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes with green chilies (canned)
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- Cook Chicken: Heat olive oil in a large skillet or Dutch oven, brown chicken for 5–6 minutes. Remove and set aside.
- Sauté Aromatics: In the same pan, sauté onion and garlic until softened, about 3 minutes.
- Add Rice and Spices: Stir in rice, chili powder, cumin, paprika, salt, and pepper; cook for 1 minute.
- Cook Rice: Pour in chicken broth and diced tomatoes; return chicken to the pan. Bring to a boil, then cover and simmer for 18–20 minutes.
- Finish Dish: Remove from heat, stir in cheddar cheese and cilantro until melted. Serve with lime wedges.

- For extra spice, add diced jalapeños or hot sauce.
- Substitute shredded rotisserie chicken for a quicker version.
