This Easy One Pot Queso Chicken and Rice recipe is a flavorful Tex-Mex dish that combines tender chicken, rice, and cheesy goodness in one pot for a convenient and delicious meal.

Chicken and Seasonings:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Rice Mixture:

  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes with green chilies (canned)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Cook Chicken: Heat olive oil in a large skillet or Dutch oven, brown chicken for 5–6 minutes. Remove and set aside.
  2. Sauté Aromatics: In the same pan, sauté onion and garlic until softened, about 3 minutes.
  3. Add Rice and Spices: Stir in rice, chili powder, cumin, paprika, salt, and pepper; cook for 1 minute.
  4. Cook Rice: Pour in chicken broth and diced tomatoes; return chicken to the pan. Bring to a boil, then cover and simmer for 18–20 minutes.
  5. Finish Dish: Remove from heat, stir in cheddar cheese and cilantro until melted. Serve with lime wedges.
