For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- 8 cups low-sodium chicken broth
- 2 cups cooked shredded chicken (rotisserie or poached)
- 2 cups wide egg noodles
- 1 bay leaf
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the Olive Oil: In a large pot over medium heat, heat the olive oil.
- Sauté Vegetables: Add the onion, carrots, and celery. Sauté until softened, about 5-6 minutes. Stir in garlic, thyme, and rosemary; cook for 1 minute.
- Add Broth and Simmer: Pour in chicken broth, add bay leaf, bring to a boil. Reduce heat, simmer for 10 minutes.
- Cook Noodles and Chicken: Stir in egg noodles, cook for 7-8 minutes. Add chicken, cook for 3-4 minutes.
- Season and Serve: Remove bay leaf, season with salt and pepper. Stir in parsley before serving.
Notes
- Use leftover roasted chicken or turkey for added flavor.
- For a richer soup, add cream or butter before serving.
