Recreate the famous Fiesta Lime Chicken from Applebee’s at home with this delicious copycat recipe. Tender grilled chicken topped with a zesty lime marinade, gooey cheese, and a crunchy tortilla chip crust.

Marinade:
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Chicken:
- 4 boneless, skinless chicken breasts
Toppings:
- 1/2 cup ranch dressing
- 1/4 cup salsa
- 1 cup shredded cheddar jack cheese
- 1 cup crushed tortilla chips
- Chopped cilantro and lime wedges for garnish
Instructions
- Prepare Marinade: In a bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper.
- Marinate Chicken: Place chicken in a resealable bag or dish, pour marinade over, and refrigerate for at least 30 minutes.
- Grill Chicken: Preheat grill to medium-high heat. Grill chicken for 5–6 minutes per side, or until cooked through.
- Prepare Toppings: Mix ranch dressing with salsa. Spread over grilled chicken, top with cheese, and broil for 2–3 minutes.
- Finish and Serve: Sprinkle with crushed tortilla chips, garnish with cilantro and lime wedges.
