- 1 cup cooked and cooled hash browns or diced potatoes
- 6–8 large flour tortillas
Instructions
- Sauté Veggies: Heat olive oil in a skillet, sauté onion and bell pepper until softened. Add cooked sausage or bacon if desired.
- Prepare Egg Mixture: Whisk eggs, milk, salt, and pepper. Scramble with veggies until set. Mix in hash browns and cheese.
- Assemble Burritos: Warm tortillas, fill with mixture, fold in sides, and roll tightly. Wrap in foil or parchment.
