For the Steak:
- 2 ribeye or sirloin steaks (about 8 oz each)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil

- 4 garlic cloves (smashed)
- 2 sprigs fresh rosemary or thyme
For the Mashed Potatoes:
- 1 ½ pounds Yukon gold potatoes (peeled and chopped)
- 1/2 cup whole milk
- 1/4 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
For Garnish:
- Chopped parsley
Instructions
- Cook the Potatoes: Bring a large pot of salted water to a boil. Add the chopped Yukon gold potatoes and cook for 12 to 15 minutes, or until they are fork-tender. Drain the potatoes thoroughly and return them to the pot.
- Mash the Potatoes: Add milk, heavy cream, and 2 tablespoons butter to the hot potatoes. Mash everything together until smooth and creamy. Season with salt and pepper to taste. Cover the pot and keep the mash warm while you cook the steaks.
- Prepare the Steaks: Pat the steaks dry with paper towels. Season both sides evenly with salt and black pepper to enhance flavor and ensure a good sear.
- Sear the Steaks: Heat 1 tablespoon of olive oil in a heavy skillet over medium-high heat until shimmering. Place the steaks in the skillet and cook for 3 to 4 minutes per side for medium-rare, adjusting the time slightly depending on the thickness of your steaks.
- Add Aromatics & Baste: In the last minute of cooking, add 3 tablespoons unsalted butter, smashed garlic cloves, and fresh rosemary or thyme sprigs to the skillet. Tilt the pan slightly and use a spoon to baste the steaks continuously with the melted garlic butter mixture for enhanced flavor and juiciness.
- Rest the Steaks: Remove the steaks from the skillet and transfer them to a plate. Let them rest for 5 minutes; this allows the juices to redistribute, keeping the meat tender and moist.
- Serve: Spoon a generous portion of creamy mashed potatoes onto each plate. Place the rested steak on top or beside the mash. Drizzle the steaks with the flavorful pan juices from the skillet. Garnish with chopped parsley to add freshness and color to the dish.

- For an extra-rich mashed potato, substitute all the milk with heavy cream.
